Sweet Potato Pancakes

Sweet potatoes are root vegetables that are often overlooked. Sometimes, you may come across sweet potato fries, but that is about as mainstream as these guys get.

Well, hopefully that is about to change! I stumbled upon a recipe for Sweet Potato Pancakes not too long ago, and thought it would be a fun and easy recipe to share with all of you. A different weekend breakfast project, perhaps?

Sweet Potato Pancakes     Yield: 4-5 servings

Ingredients: For Pancakes

  • 2 egg whites
  • 1/2 scoop protein powder (ideally, Vanilla)
  • 4 oz cooked sweet potato, skin off
  • 1/8 c oats
  • 1/8 c unsweetened almond milk
  • 1/2 tsp baking powder

For Frosting

  • 1/2 scoop protein powder (ideally, Vanilla)
  • 1 1/2 tbsp unsweetened almond milk
  • 1/2 tbsp almond butter

  1. In a blender, mix pancake ingredients. Batter will be thick.
  2. Pour out 4-5 pancakes on a hot griddle – medium to low heat.
  3. Mix frosting ingredients and heat in microwave for 5-10 seconds.
  4. Melt 1/2 tbsp of almond butter and pour on pancakes for final touch.

Not so bad, right? RIGHT. I recommend all of you at least try this. It can’t hurt, and with 30 grams protein, 39 grams carbohydrates, 322 calories and 6 grams of fat, these pancakes are healthy, delicious and a heck of a lot better for you than the ordinary pancakes. Let me know how it goes if you take the leap!

x’s and o’s as always.

About azuremarie

Bonjour, I'm Azure; a healthy dose of eccentricity best taken with a grain of salt. Most people describe me as sassy, and I like that. I love words, and think that anyone who can twist them in their mouth and make something beautiful come out is sexy and someone with whom I want to spend my time. I read a lot (bordering on too much), and am baller at boggle. I happen to be addicted to concerts/live music, and will listen to anything that can carry a beat, and even those that don't. I believe that being normal is boring, and love bright colors. I have a soft spot for animals, particularly dogs and horses, but I am beginning to be a cat person as well. Sometimes, I will admit that I like some animals better than some people - they're great listeners and don't judge. J'adore voyager. Someday I want to be able to look at a map of the world and say "I have been there, there, and there... and there", and have a memory attached to them all. I've recently begun to work at an organic juice bar, and diet/holistic health is starting to become a main passion of mine. I want to be able to experience our world, as well as help save it. Oh, and unicorns exist.
